Lemon Simple Syrup
- ¼ cup sugar alternative of choice (allulose works well)
- ¼ cup water
- Zest of 1 large lemon
Whipped Lemonade
- 1 cup well-shaken and stirred full-fat canned coconut milk
- ½ cup lemon juice (from 2 large lemons)
- 2 cups ice cubes
- ¾ cup frozen raspberries
DIRECTIONS:
- Prepare Lemon Simple Syrup: Combine ¼ cup sugar and ¼ cup water in a small saucepan. Bring to a gentle simmer; cook, stirring occasionally, until the sugar dissolves, about 2 minutes. Stir in lemon zest; remove from heat. Cover and let steep for 5 minutes. Refrigerate, stirring occasionally, until cool, about 20 minutes. Strain through a fine-mesh sieve; discard the zest.
- Prepare Whipped Lemonade: Combine the cooled syrup, 1 cup coconut milk, ½ cup lemon juice, 2 cups ice, and ¾ cup raspberries in a blender. Blend until the ice is crushed and the mixture is slushy, about 30 seconds. Divide among 4 glasses and serve immediately.
FAQ’S:
- What should I do if the Whipped Raspberry Lemonade is too thick or too thin? If your drink is too thick, gradually add 1 tablespoon of water until you achieve your desired consistency. If it’s too thin, you can add more ice as needed.
- What else can I do with the lemon simple syrup? Having a fresh batch of lemon simple syrup in the fridge is always a great idea, especially during warm weather. It adds a refreshing, bright flavor to iced teas, cocktails, and mocktails.
- How should I store the lemonade? This lemonade is whipped, so it’s best when made fresh for optimal texture and flavor. However, you can store the lemon simple syrup separately in an airtight container for up to 1 week.
TIPS:
These are the key tips we learned while developing and testing this recipe in our Test Kitchen to make sure it works, tastes great, and is good for you, too!
- We chose frozen raspberries because they create a thicker texture while preserving the fresh fruit flavors. Using fresh raspberries would require more ice for a thicker consistency, which would dilute the flavor.
- For the best texture, we suggest adding the liquid ingredients to the blender first, followed by the frozen ingredients. The liquid helps create a vortex that pulls in the frozen ingredients.
- You can swap lemon juice for lime juice to create a limeade, or enhance the lemon syrup by adding an herb like thyme or a spice like coriander.
