Watermelon Mojito Salad

INGREDIENTS:

Dressing:

  • 2 tablespoons lime zest
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 packet of Stevia sweetener
  • Kosher salt
  • Freshly found black pepper

Salad :

  • 4-6 cups watermelon
  • 1/3 cup torn mint leaves
  • 1/3 cup Feta Cheese (I used Low Fat Feta)
  • 1/4 cup pistachios

        DIRECTIONS:

        1. Place watermelon chunks in a large bowl. Set aside.
        2. Whisk together dressing ingredients. Season dressing with salt and pepper.
        3. Pour dressing over watermelon. Add feta and toss lightly to combine.
        4. Top with mint, pistachios, and sea salt. Chill and Serve.
