Watermelon Mojito Salad
INGREDIENTS:
Dressing:
- 2 tablespoons lime zest
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 packet of Stevia sweetener
- Kosher salt
- Freshly found black pepper
Salad :
- 4-6 cups watermelon
- 1/3 cup torn mint leaves
- 1/3 cup Feta Cheese (I used Low Fat Feta)
- 1/4 cup pistachios
DIRECTIONS:
- Place watermelon chunks in a large bowl. Set aside.
- Whisk together dressing ingredients. Season dressing with salt and pepper.
- Pour dressing over watermelon. Add feta and toss lightly to combine.
- Top with mint, pistachios, and sea salt. Chill and Serve.
