Summer Salad Recipe

Ingredients

  • 1 English cucumber (diced)
  • 1 can black beans (rinsed)
  • 1 1/4 cups corn
  • 1 red pepper (diced)
  • 1 cup cherry tomatoes (I used half red, half yellow)
  •  1/2 cup fresh cilantro (packed, chopped)
  • 1 lime
  • 1 avocado (diced)
  • salt
  • pepper

Directions:

  1. Mix ingredients in large bowl.

  2. Chill and serve as side dish, with tortilla chips or on top of grilled chicken.
