Roasted Nutmeg Cauliflower

INGREDIENTS:

  • 1 head cauliflower (about 2 pounds), cut into florets
  • ¼ tsp ground nutmeg
  • 2 Tbsp extra-virgin olive oil
  • 1/2 tsp salt
  • 3 Tbsp Greek yogurt

DIRECTIONS:

  1. Preheat oven to 425 degrees.
  2. Place the cauliflower in a 9×13-inch baking pan. Toss with the oil and sprinkle with the nutmeg and salt.
  3. Cover the pan.
  4. Roast for 20-30 minutes, stirring occasionally. Edges should get toasty.
  5. Top with yogurt.
