Roasted Nutmeg Cauliflower

INGREDIENTS:
- 1 head cauliflower (about 2 pounds), cut into florets
- ¼ tsp ground nutmeg
- 2 Tbsp extra-virgin olive oil
- 1/2 tsp salt
- 3 Tbsp Greek yogurt
DIRECTIONS:
- Preheat oven to 425 degrees.
- Place the cauliflower in a 9×13-inch baking pan. Toss with the oil and sprinkle with the nutmeg and salt.
- Cover the pan.
- Roast for 20-30 minutes, stirring occasionally. Edges should get toasty.
- Top with yogurt.
