Peanut butter cup frozen treats
Recipe: Jenny’s kitchen
INGREDIENTS:
Bars:
- 2 cups Greek yogurt
- 1 cup peanut butter
- ¼ cup low sugar maple syrup of choice (Birchbender or Lakanto)
- 1 tsp vanilla extract
- 20 drops vanilla stevia liquid (more or less depending on sweetness desired)
Chocolate coating:
- 1 package low sugar dark or light chocolate chips (lily brand works well – I mixed half milk and dark)
- 1 tbsp coconut oil
- Wooden popsicle sticks OR cut large plastic straws in half.
DIRECTIONS:
- Blend all ingredients for bars in a blender or food processor.
- Lay parchment paper on a metal baking sheet.
- Take 1/3 cup portions of the Bar mixture and spread out to form circles on the parchment.
- Add a stick or straw to form a stick to hold once frozen. Cover this with a tbsp of the bar mixture.
- Optional: For crunch, add 1 Tbsp of peanuts to the top of the bar before freezing.
- Place in freezer until firm. About 1 hour.
- While bars are freezing heat the chocolate chips with coconut oil in the microwave in 30-second increments. Stir between until melted.
- Remove the bars from the freezer.
- Coat with the melted chocolate completely OR just dip half of the bar into the chocolate.
- Place back on parchment (on metal sheet) and put back in the freezer until frozen.
