Creamy Low-Carb Yogurt Popsicles

- Diabetes-friendly recipes curated by Jennifer Smith, RD, LD, CDCES Director of Nutrition -

A cool, creamy frozen treat with a surprisingly simple ingredient list. These yogurt popsicles combine thick, protein-rich Skyr with cream and a little sweetness for a satisfying snack or dessert. They’re naturally low in carbohydrate and can be customized with berries, cocoa, vanilla, or other favorite flavors.

Recipe adapted from: https://www.lowcarb-nocarb.com/sugar-free-protein-popsicles/

INGREDIENTS:

Yogurt Popsicles

  • 1 cup plain Skyr yogurt (A thick Greek yogurt can also be used as an alternative but may have more carbs per serving)
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar-free sweetener (I like the powdered Allulose for sweetness without aftertaste)

Optional Chocolate Shell

  • 1 cup sugar-free chocolate, chopped (I like Trader Joe’s No sugar dark choc chips)
  • 3 tablespoons coconut oil

Directions

1. Prepare the creamy base. Place the cold heavy cream in a mixing bowl. Add the powdered sweetener and whip until the cream becomes thick and holds its shape.

2. Add the yogurt. Gently incorporate the Skyr into the whipped cream. Mix until the ingredients are evenly combined and the mixture is smooth and creamy.

3. Fill the molds. Divide the mixture among popsicle molds, leaving a small amount of room at the top for expansion. Insert the sticks and tap the molds lightly on the counter to help remove large air pockets.

4. Freeze. Place the molds in the freezer for at least 4–6 hours. For the firmest texture, freeze them overnight.

5. Make the chocolate coating (optional). For an optional chocolate shell, combine the chopped sugar-free chocolate and coconut oil in a heat-safe bowl over a double boiler. Stir occasionally until completely melted and smooth. Allow the chocolate mixture to cool slightly while keeping it fluid.

6. Coat the popsicles (optional) Remove the frozen popsicles from their molds. Dip each one into the melted chocolate, allowing the excess to drip away.

The coating should firm up quickly against the frozen popsicle, creating a thin chocolate shell.

Flavor Variations

The basic vanilla-style version is delicious on its own, but you can easily change the flavor without adding the chocolate coating:

  • Berry: Add finely chopped strawberries, blueberries, or raspberries to the mixture or layer them into the molds.
  • Chocolate: Whisk unsweetened cocoa powder into the yogurt mixture.
  • Vanilla: Add ½–1 teaspoon vanilla extract or Vanilla stevia drops.
  • Nut butter: Swirl in a spoonful of your favorite nut or seed butter.
  • Chocolate chips: Fold in a small amount of sugar-free chocolate chips.
  • Cinnamon or cardamom: Addfor a simple warm-spice variation.
  • Peanut butter powder or Flavored protein/collagen powder of choice: This will help increase the protein content of this treat.

    Helpful Tips

Insulin dosing – pay attention to the impact of this treat. While low carb, it may not have much impact initially but due to the fat content, it might raise BG slowly over the few hours following this treat.

Trouble removing them from the molds? Run the outside of the mold under warm water for a few seconds. The popsicle should release more easily without having to force it.
