BLT Chicken Salad with Avocado

Original recipe: Health.com – July/August 2021 magazine

INGREDIENTS:

  • ½ cup full-fat buttermilk
  • 2 Tbsp Organic Avocado oil Mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 medium garlic clove, minced
  • 2 Tbsp. chopped fresh dill
  • 2 ½ cups coarsely shredded cooked chicken breast
  • 1 pt. multicolored cherry tomatoes, cut in half
  • 1 cup chopped romaine lettuce
  • 3 slices center-cut bacon, cooked and coarsely chopped
  • ½ cup chopped avocado

    DIRECTIONS:

    1. In a large bowl, whisk together buttermilk, mayo, mustard, salt, pepper, garlic, and 1 Tbsp dill
    2. Add chicken, tomatoes, lettuce, and bacon to the bowl and toss to fully coat.
    3. Top with avocado and sprinkle with remaining Tbsp of dill.
    4. Serve immediately.
